 +    - Slice shallots thin

 +      - Bring 2 cups oil to 275° F
 +      - Add shallots and cook, stirring until light golden brown (about 8 minutes).

 +      - Raise oil to 350° F
 +      - Set a fine mesh strainer over a heat proof bowl.
