 +  - Prep
 +    - Rough chop prosciutto
 +    - Cut tomatoes in half
 +    - Cut plum in to quarters (remove stone)
 +    - Cut spinach into bite sized pieces
 +  - Cook
 +    - Cook plum quarters in a hot oiled pan, 1 to 2 minutes on aside to cool
 +    - Cook prosciutto in the same pan for 5 to 6 minutes (until crisp and brown)
 +    - Slice plum into bite sized pieces
 +    - Cook pita in the same pan, 1 to 2 minutes, until warmed through and starting to crisp
 +    - Cut pita into bite sized pieces
 +    - Toss spinach and pita pieces in vinaigrette
 +    - Top with tomatoes, cheese and plum.
