====== Green Goddess Chicken Salad ======

|  2  | ea | Chicken thighs (5 oz ea) |
|  ½  | ea | Red Onion (90 g) |
|  1  | ea | Avocado |
|  ½  | cup | Roasted almonds |
|  ½  | cup | [[recipes:green-goddess-dressing|Green Goddess Dressing]] |
|  1  | ea | Head of Romaine |

  - Prep
    - Chop onion fine (or cut into thin strips)
    - Remove skin from avocado and cut into small pieces
    - Chop almonds into small (peppercorn) sized pieces
    - Remove lettuce stems.  Chop stems into small pieces and tear the leaves into bite sized chunks.  Wash both.
  - Cook
    - Fry thighs in a hot oiled pan for 4 minutes on a side.
    - Put on a plate and chill in refrigerator for 10 to 15 minutes.
    - Chop the chicken into small pieces
    - Combine chicken, onion, avocado, almonds, and dressing in a bowl and stir to coat the chicken and distribute evenly.
    - Serve over lettuce
