====== Potato Latkes with Apple Walnut Salad ======

|  12  | oz | Potatoes (325 g) |
|  2  | large | Carrots (335 g) |
|  3  | ea | Scallions (50 g) |
|  1  | ea | Egg |
|  ½  | cup | Flour (45 g) |
|  1  | ea | Apple |
|  ¼  | cup | Walnuts (30 g) |
|  1  | tbsp | Prepared horseradish |
|  ½  | cup | Greek yogurt |
|  ¼  | tsp | Cinnamon |

Note: These don't reheat well.  Either cook each serving individually, or serve both at once.

  - Prep
    - Preheat oven to 250° F
    - Grate potatoes
    - Grate Carrots
    - Separate scallion whites and greens.  Cut greens into thin round, and mince whites.
    - Whisk egg
    - Cut apple into bite sized chunks
    - Rough chop walnuts
  - Cook
    - Combine the apple, walnuts, horseradish, yogurt, and cinnamon in a bowl.  Salt to taste
    - Combine potato, carrot, scallion whites, egg, and flour in a large bowl.  Season with salt and pepper to taste.
    - Working in batches, scoop out half cup portions into a hot well oiled pan.  Press down into patty shapes.  Cook for 4 to 6 minutes on a side.  Put in oven on a covered plate while preparing remaining latkes.
