====== Prosciotto Plum Spinach Salad with Pita ====== {{tag>Recipe Carne LowCarb 5}} | 2 | Servings | ^ Qty ^ Unit ^ Ingredient ^ | 3 | oz | Prosciutto | | ::: | ::: ^ Sub: Bacon | | 2 | ea | Whole wheat pita | | ½ | cup | Grape tomatoes (50 g) | | 1 | oz | Goat Cheese | | ::: | ::: | Sub: Feta | | 1 | ea | Plum (or other stone fruit) | | 3 | cups | Spinach (150 g) | | 4 | tbsp | Vinaigrette | - Prep - Rough chop prosciutto - Cut tomatoes in half - Cut plum in to quarters (remove stone) - Cut spinach into bite sized pieces - Cook - Cook plum quarters in a hot oiled pan, 1 to 2 minutes on aside to cool - Cook prosciutto in the same pan for 5 to 6 minutes (until crisp and brown) - Slice plum into bite sized pieces - Cook pita in the same pan, 1 to 2 minutes, until warmed through and starting to crisp - Cut pita into bite sized pieces - Toss spinach and pita pieces in vinaigrette - Top with tomatoes, cheese and plum. - Top with prosciutto
