====== Sambal Chicken with Mango Romaine Salad ====== {{tag>Recipe Carne LowCarb 5}} | 2 | Servings | ^ Qty ^ Unit ^ Ingredient ^ | 2 | ea | Chicken thighs (5 oz each) | | 2 | tbsp | Mayonnaise | | 2 | tbsp | Garlic chili sauce | | 1 | ea | Head of Romaine | | 4 | ea | Carrots (100 g julienned) | | 1 | large | Mango (380 g whole) | | 1 | ea | Jalapeno (42 g whole) | | 2 | tbsp | Thai basil | | 2 | tbsp | Apple cider vinegar | | 1 | tbsp | Fish sauce | | 1 | tsp | Honey | | ½ | tsp | Grated ginger | | 2 | tbsp | Almond butter | - Prep - Pound chicken thighs flat. - Combine mayonnaise with chili sauce. - Coat chicken with chili mayo. - Tear romaine into bite sized pieces and wash. - Julienne carrots. - Remove seed and skin from mango and dice - Slice jalapeno into thin rounds - Remove stems from basil and roughly chop - Combine vinegar, fish sauce, honey, ginger, almond butter, and 1 to 2 tbsp of olive oil into dressing. - Cook - In a hot oiled pan, cook the chicken 3 minutes on a side. Set aside to rest. - Toss romaine and carrots in dressing. - Top with chicken, surrounded by mango, jalapeno and basil
