====== Smoky Tacos with Black Beans ====== {{tag>Recipe Carne GroundMeat 5}} | 2 | Servings | ^ Qty ^ Unit ^ Ingredient ^ | 10 | oz | Pork Butt | | 1 | tbsp | Spice Blend (chili powder, smoked paprika, cumin) | | ½ | ea | Onion | | ½ | cup | Black Beans | | 1 | cup | Red Taco Sauce | | ¼ | cup | Cilantro leaves | | 1 | small | Apple | | 1 | ea | Lime | | 8 | ea | Street taco sized corn tortillas | - Prep - Dice Pork into small pieces - Add spice blend and half the taco sauce and toss to coat - Set aside to marinate for a bit - Rough chop Cilantro - Dice onion. - Set aside 3/4 cup for filling, mix remainder with cilantro for garnish - Julienne apple and squeeze half the lime over them (toss to coat) - Filling - Cook pork pieces for 4 to 6 minutes until done. - Remove from pan. - Add ¾ cup of onions and cook until soft - Add beans and cook until soft - Add back the meat and stir to combine - Serve - Heat tortillas and serve warm with remaining ingredients.
