Mince ¼ cup and reserve the rest. - Cut into small pieces - Pull leaves off cilantro and chop into small pieces - Cut avocado into chunks, or prepare guacamole. - Pico - Add Tomatoes - Add lime juice - Add minced onion - Add cilantro - Salt & Pepper to taste. - Filling - Fry ground meat, breaking up. - Add reserved onion and jalepeno and cook until tender - Add beans and rice and cook until warmed through. Serve filling with pico and avocado on top.
