====== Tomato Spinach Lentils ====== {{tag>Recipe Vegetarian 5}} | 2 | Servings | ^ Qty ^ Unit ^ Ingredient ^ | 160 | g | Red lentils | | ΒΌ | ea | Onion | | 1 | small | Carrot | | 1 | small | Celery rib | | 1 | tbsp | Tomato paste | | 1 | cup | Fire roasted tomatoes | | 3 | cups | Spinach (110 g) | - Prep - Dice onion, carrot, and celery to quarter inch pieces - Cut spinach to bite sized pieces - Cook - Cook mirepoix in a hot oiled pan until soft - Add tomato paste and cook for a minute - Add 1 cup water, tomatoes, and lentils. Bring to a boil then reduce to a simmer. - Cook, covered, for 15 minutes, stirring occasionally and adding water as needed. - Add spinach and cook, covered for a couple of minutes to wilt. - Mix in spinach and continue cooking until soft.
