====== Turnip Kale Salad ====== {{tag>Recipe Vegetarian LowCarb 4}} | 2 | Servings | ^ Qty ^ Unit ^ Ingredient ^ | 4 | cups | Shredded kale (145 g) | | 1 | ea | Orange | | 1 | large | Turnip (250 g) | | ½ | cup | Pepitas | | ¼ | cup | Basalmic vinegar | | 2 | tbsp | Olive oil | - Prep - Preheat oven to 400° F - Shred Kale - Peel orange, separate into segments and cut into bite sized pieces - Cut turnip into bite sized, quarter inch thick slices - Cook - Bake turnips 10 to 12 minutes until soft and browned - Make dressing with vinegar, oil, salt, pepper and a little orange juice (crush some of the segments) - Combine kale, turnips, orange, and pepitas and toss in dressing
