====== Warm Carrot Salad ====== {{tag>Recipe Vegetarian LowCarb 4}} | 2 | Servings | ^ Qty ^ Unit ^ Ingredient ^ | 3 | med | Carrots (250 g) | | 1 | cup | Grape tomatoes (125 g) | | 2 | tbsp | Cilantro | | ½ | ea | Lemon | - Prep - Slice carrots into bite size rounds about a quarter inch thick. - Cut tomatoes in half - Rough chop the cilantro - Cut lemon in half - Cook - In a pan with 1 to 2 tablespoons of oil, cook the carrots for 3 to 4 minutes (crisp-tender), remove to a mixing bowl - Add the tomatoes and cilantro - Add 1 to 2 tablespoons of oil - Add salt and pepper to taste - Juice the half lemon over the salad - Mix to combine.
