Chicken Marbella

2 ea Chicken thighs (5 oz ea)
3 ea Garlic cloves
1 tbsp Capers
2 tbsp Red wine vinegar
1 tbsp Honey
½ cup White wine
5 ea Dates (40 g)
½ tbsp Oregano
½ cup Green olives (60 g)
1 tbsp Butter
1 ea Radicchio (170 g)
  1. Prep
    1. Chop garlic
    2. Mix vinegar and honey
    3. Chop dates into small pieces
    4. Cut green olives in half
    5. Cut radicchio into quarters
  2. Cook
    1. Fry the chicken whole for about 4 minutes (2 minutes per side). Put on a plate to cool
    2. In same pan (add oil if needed), add garlic and capers and cook for about 1 minute
    3. Dice chicken.
    4. Add chicken, juices, vinegar mixture, dates, oregano, and wine. Cook until chicken is done and sauce thickens (3 to 5 minutes)
    5. Remove from heat. Add olives and butter. Cover to keep warm.
    6. Fry radicchio for about 2 minutes per side (6 minutes; 2 cut sides and outside)
