Chipotle Sweet Potato Chili

10 oz Ground chicken
1 med Red onion (230 g whole)
2 ea Garlic clove
cup Crushed Tomatoes
1 tbsp Spices: chili powder, cumin, smoked paprika, chipotle
1 small Sweet Potato (220 g)

Serve with a salad.

  1. Prep
    1. Mince the garlic
    2. Cut red onion into large pieces
    3. Cut potato into bite sized chunks
  2. Cook
    1. In a small pot, brown the chicken
    2. Add the onions and garlic and cook until softened
    3. Add the tomatoes, spcies, and potato
    4. Bring to boil, reduce to a simmer and cook for 20 to 30 minutes, stirring occasionally.
