Cocunut Shrimp

10 oz Shrimp
cups Unsweetened coconut shreds
Sub: Panko bread crumbs
½ tsp Granulated garlic
2 ea Egg

Serve with Honey Lime Cucumber Salad and Spicy Pineapple Mayonnaise.

  1. Prep
    1. Dry shrimp and season lightly with salt
    2. Beat eggs and pour into plate
  2. Cook
    1. Combine coconut and garlic and spread on a plate
    2. Coat shrimp with flour and put on skewers (optional: trim skewers to fit pan first)
    3. Dip in eggs, and press into coconut
    4. In a hot oiled pan (or on a grill), cook skewers 1 to 2 minutes on a side (3 to 4 if large shrimp or scallops)
    5. Serve with salad and dressing on the side.
