Cut cabbage into thin strips
Dice bell pepper 1 inch pieces
Cut cucumber into thick quarter-rounds
Strip the mint leaves and chiffonade
Chop the cashews into small pieces
Cook
Add the cabbage, bell pepper, cucumber, mint, and cashews to a bowl.
Add dressing and salt to taste
Toss to coat
