Prep
Mince the olives into a paste
Mince the shallots until they are fine (like sand or bread crumbs)
Zest the lemon
Mince the Oregano
Cook
Combine the olives, shallots, lemon zest, oregano, and olive oil into a paste.
Let stand until the shallots absorb some of the liquids.
