Prep
Cut pork butt into bite sized pieces
Make zoodles from zucchini
Rough chop garlic
Slice jalapeno into thin rounds
Cut carrots into quarter inch rounds or strips
Remove stem from broccoli leaves and chiffonade leaves. Cut stems into small pieces.
Combine fish sauce, hoisin sauce, ad sesame-dressing
Cook
Fry zoodles for 1 to 2 minutes (add salt)
In same pan, cook garlic for about 30 seconds
Add pork and stir well. Cook for 2 minutes on one side to brown, then toss until no pink is visible.
Add jalapeno, carrot, and broccoli leaves/stems and cook for 2 minutes (until crisp-tender).
Add sauce and cook for about 1 minute
Add zoodles and toss to coat.
Push everything aside and scramble egg
Stir to combine
