Sausage and Charred Vegetables

2 ea Sausage (4 oz ea)
1 ea Onion (195 g whole)
4 oz Mushrooms
½ cup Cherry tomatoes (75 g)
3 ea Sweet mini peppers (120 g)
1 tsp Chili Powder
½ cup Green Romesco
½ cup Tangy Romesco
  1. Prep
    1. Preheat oven to 450° F
    2. Cut onions into large pieces
    3. Cut mushrooms in half
    4. Cut tomatoes in half
    5. Cut peppers into large chunks
  2. Cook
    1. Toss onion, mushrooms, tomatoes, and peppers with chili powder and a little oil.
    2. Spread vegetables on an oiled sheet pan.
    3. Roast vegetables 20 to 25 minutes until starting to char but not burned
    4. While roasting, cook sausages
      1. Fry in a hot oiled pan for 4 minutes on a side
      2. Add a quarter cup water and cover, steaming for 4 minutes more on each side (adding water if needed)
