Prep
Preheat oven to 450° F
Cut onions into large pieces
Cut mushrooms in half
Cut tomatoes in half
Cut peppers into large chunks
Cook
Toss onion, mushrooms, tomatoes, and peppers with chili powder and a little oil.
Spread vegetables on an oiled sheet pan.
Roast vegetables 20 to 25 minutes until starting to char but not burned
While roasting, cook sausages
Fry in a hot oiled pan for 4 minutes on a side
Add a quarter cup water and cover, steaming for 4 minutes more on each side (adding water if needed)
