Shrimp Bok Choi Stir Fry

10 oz Shrimp
2 large Bok choi (200 g)
3 ea Green onions (45 g)
2 tbsp Ginger (15 g)
2 tbsp Fish sauce
2 tbsp Sherry vinegar
2 tbsp Toasted sesame oil

Serve with Daikon Salad.

  1. Prep
    1. Dry shrimp. Season with salt and pepper.
    2. Cut bok choi into bite sized pieces and rince
    3. Cut green onions into 1 to 2 inch lengths
    4. Mince ginger
    5. Mix ginger, fish sauce, vinegar and oil
  2. Cook
    1. Cook shrimp until done (2 to 4 minutes). Remove from pan.
    2. In a hot oiled pan, cook bok choi, and green onion, browning well on one side then stir frying until starting to soften.
    3. Add stir fry sauce and cook until reduced and vegetables are soft.
    4. Add back in shrimp and any juices. Warm through and serve.
