Taco Bowls

Qty Unit Ingredient
4 ea Roma Tomatoes (230 g)
2 tbsp Lime Juice (1 lime)
1 small Red Onion (100 g)
1 large Jalepeno
¼ cup Cilantro
10 oz Ground Chicken
- - Cumin, Chili Powder, Oregano to taste
1 cup Cooked Rice
1 small Avocado, or 1/2 cup guacamole
1 cup Cooked black beans
  1. Prep
    1. Seed and dice tomatoes into small pieces
    2. Juice lime
    3. Rough Cut onion. Mince ¼ cup and reserve the rest.
    4. Cut into small pieces
    5. Pull leaves off cilantro and chop into small pieces
    6. Cut avocado into chunks, or prepare guacamole.
  2. Pico
    1. Add Tomatoes
    2. Add lime juice
    3. Add minced onion
    4. Add cilantro
    5. Salt & Pepper to taste.
  3. Filling
    1. Fry ground meat, breaking up.
    2. Add reserved onion and jalepeno and cook until tender
    3. Add beans and rice and cook until warmed through.

Serve filling with pico and avocado on top.
