Black Eyed Pea Salad

2 Servings
Qty Unit Ingredient
2 ea Scallions
1 ea Lemon
1 cup Black Eyed Peas
1 head Butter Lettuce
1 ea Red Bell Pepper
½ clove Garlic
1 tbsp Olive Oil
  1. Prep
    1. Slice scallions into thin rings.
    2. Juice lemon.
    3. Tear lettuce into bite sized pieces and wash.
    4. Cut bell pepper into short sticks
    5. Mince garlic fine.
  2. Cook
    1. Combine lemon juice and oil. Add salt, pepper, garlic, and other seasonings to taste.
    2. Combine scallions, beans, and bell pepper. Salt and toss.
  3. Serve
    1. Dress greens and top with bean mixture.
