Chard with Pancetta
| Qty | Unit | Ingredient |
| 3 | oz | Pancetta |
| 1 | small | Red Onion (155 g whole) |
| 6-8 | ea | Chard leaves (200 g) |
| 1 | tbsp | Balsamic vinegar |
Prep
Dice the pancetta
Slice the onion thin
Remove the chard stems
Dice the stems
Cut or tear the leaves into pieces
Cook
Fry the pancetta in a hot oiled pan and cook for 2 to 3 minutes
Add the onion and cook until soft (1 to 2 minutes)
Add the chard stems and cook until they soften and brown (2 to 4 minutes)
Add the chard leaves and vinegar and cook until the leaves are wilted
