Chicken Burger Lettuce Wraps

2 Servings
Qty Unit Ingredient
10 oz Ground chicken
½ tbsp Spices (onion powder, granulated garlic, smoked paprika)
1 tbsp Bread crumbs (as needed)
½ cup Grape tomatoes (90 g)
¼ ea Red Onion
4 tbsp Parsley
2 tbsp Sherry vinegar
2 tsp Olive oil
½ cup Mayonnaise
2 ea Romain hearts
1 ea Sweet potato (210 g)
  1. Prep
    1. Preheat oven to 450° F
    2. Dry meat. Break into chunks in a bowl and toss/fold in the spices. Add bread crumbs if it is a little loose.
    3. Dice tomatoes to quarter inch pieces
    4. Dice onion to quarter inch pieces
    5. Mince parsley
    6. Separate and wash romaine leaves for wraps (optionally cut into bite sized pieces for a side salad instead).

  2. Cook
    1. Toss potatoes with oil, salt, and pepper
    2. Spread potatoes in a single layer on a baking pan.
    3. Bake for 10 minutes, flip, then bake for 10 more minutes. Careful not to burn
    4. Mix vinegar and oil with a little salt and pepper.
    5. Add tomatoes and onion to dressing and stir
    6. Divide the meat into two patties.
    7. Cook each patty in a hot oiled pan for 4 to 6 minutes per side
    8. Serve patties topped with with mayonnaise and tomato onion relish
