Chicken Burger Lettuce Wraps

| 10 | oz | Ground chicken |
| ½ | tbsp | Spices (onion powder, granulated garlic, smoked paprika) |
| 1 | tbsp | Bread crumbs (as needed) |
| ½ | cup | Grape tomatoes (90 g) |
| ¼ | ea | Red Onion |
| 4 | tbsp | Parsley |
| 2 | tbsp | Sherry vinegar |
| 2 | tsp | Olive oil |
| ½ | cup | Mayonnaise |
| 2 | ea | Romain hearts |
| 1 | ea | Sweet potato (210 g) |
Prep
Preheat oven to 450° F
Dry meat. Break into chunks in a bowl and toss/fold in the spices. Add bread crumbs if it is a little loose.
Dice tomatoes to quarter inch pieces
Dice onion to quarter inch pieces
Mince parsley
Separate and wash romaine leaves for wraps (optionally cut into bite sized pieces for a side salad instead).
French potato
Cook
Toss potatoes with oil, salt, and pepper
Spread potatoes in a single layer on a baking pan.
Bake for 10 minutes, flip, then bake for 10 more minutes. Careful not to burn
Mix vinegar and oil with a little salt and pepper.
Add tomatoes and onion to dressing and stir
Divide the meat into two patties.
Cook each patty in a hot oiled pan for 4 to 6 minutes per side
Serve patties topped with with mayonnaise and tomato onion relish
