xxChicken Larb Lettuce Wraps
| Qty | Unit | Ingredient |
| 1 | small | Head Romain Lettuce |
| 10 | oz | Ground Chicken (or other meat, fatty preferred) |
| 1 | ea | Lime |
| 1 | medium | Tomato (125 g) |
| 1 | large | Carrot (65 g) |
| 1 | small | Onion (150 g) |
| 2 | bunch | Fresh Mint (maybe half of a regular “living herbs” |
| 1 | tsp | Chili flakes (to taste) |
| 1 | tbsp | Fish Sauce (to taste) |
Prep
Break Lettuce into leaves
Grate or julienne carrots.
Seed tomatos. Dice core and add to carrots. Dice tomato 1/2 inch.
Dice onion
Remove mint stems
Cut Lime into wedges
Cook Chicken
Lightly brown the meat in oil, breaking into smaller pieces
Remove from pan
Cook Carrots and onion
Saute carrots & tomato cores until tender in pan
Add Onion and Chili flakes and cook until soft
Finish Filling
Add meat back to pan, along with 1/2 tbsp fish sauce
Cook meat through.
Serve with fresh lettuce leave, mint and tomato.
