Creamed Spinach with Leeks

Qty Unit Ingredient
2 cups Spinach (160 g)
1 tbsp Butter
1 ea Leek (115 g)
2 ea Garlic cloves
1 tbsp Flour
½ cup Whole milk
2 ea Rosemary sprigs
  1. Prep
    1. Cut spinach into bite sized pieces
    2. Cut leek in half, then into half inch pieces. Separate the layers, wash, and dry them.
    3. Mince the garlic
  2. Cook
    1. In a pan of hot drippings (if serving with a protein), add 1 tablespoon of butter and a little water
    2. Add leeks. Cook, stirring often, for 3 to 4 minutes. Add water as needed.
    3. Add garlic and cook for about 1 minute
    4. Add flour and cook for 1 to 2 minutes
    5. Add milk, and rosemary and cook until it comes to a boil and thickens (3 to 5 minutes).
    6. Remove the rosemary
    7. Add the spinach and wilt
    8. Cook until spinach reaches desired softness
    9. Season with salt and pepper
