Fried Shallots

| 2 | cups | Thinly sliced shallots (about 4 large) |
Prep
Slice shallots thin
Cook
Brown
Bring 2 cups oil to 275° F
Add shallots and cook, stirring until light golden brown (about 8 minutes).
Drain on paper towels
Fry
Raise oil to 350° F
Set a fine mesh strainer over a heat proof bowl.
Add the shallots and flash fry (1 to 2 seconds) and immediately pour through the sieve
Reserve oil
