Fried Shallots

1 Cup

2 cups Thinly sliced shallots (about 4 large)
  1. Prep
    1. Slice shallots thin
  2. Cook
    1. Brown
      1. Bring 2 cups oil to 275° F
      2. Add shallots and cook, stirring until light golden brown (about 8 minutes).
      3. Drain on paper towels
    2. Fry
      1. Raise oil to 350° F
      2. Set a fine mesh strainer over a heat proof bowl.
      3. Add the shallots and flash fry (1 to 2 seconds) and immediately pour through the sieve
      4. Reserve oil
