Green Goddess Chicken Salad

2 ea Chicken thighs (5 oz ea)
½ ea Red Onion (90 g)
1 ea Avocado
½ cup Roasted almonds
½ cup Green Goddess Dressing
1 ea Head of Romaine
  1. Prep
    1. Chop onion fine (or cut into thin strips)
    2. Remove skin from avocado and cut into small pieces
    3. Chop almonds into small (peppercorn) sized pieces
    4. Remove lettuce stems. Chop stems into small pieces and tear the leaves into bite sized chunks. Wash both.
  2. Cook
    1. Fry thighs in a hot oiled pan for 4 minutes on a side.
    2. Put on a plate and chill in refrigerator for 10 to 15 minutes.
    3. Chop the chicken into small pieces
    4. Combine chicken, onion, avocado, almonds, and dressing in a bowl and stir to coat the chicken and distribute evenly.
    5. Serve over lettuce
