Green Romesco
| 1 | 16 oz | Mild green chilis |
| ½ | cup | Pepitas |
| 2 | tbsp | Cilantro |
| 3 | ea | Garlic cloves |
| 1 | tbsp | Red wine vinegar |
| ½ | cup | Olive oil |
| ½ | tsp | Salt (to taste) |
Prep
Chop chilis fine (if not already cut)
Mince pepitas
Mince cilantro
Mince garlic fine
Cook
Combine chilis, pepitas, cilantro, garlic, vinegar, and oil and blend into a smooth paste.
Season with salt to taste.
