Jicama Citris Salad

Qty Unit Ingredient
¼ ea Savoy cabbage (245 g)
1 small Jicama (380 g)
1 ea Orange
4 tbsp Mint
2 tbsp Lime juice (2 limes)
cup Julienned Carrot (125 g)
  1. Prep
    1. Slice cabbage into short ribbons
    2. Cut jicama into thin, wide bite-sized strips
    3. Peel and cut orange into bite sized pieces
    4. Remove mint stems and rough chop the leaves
    5. Juice the limes
    6. Julienne the carrots
  2. Cook
    1. Heat some oil in a pan
    2. Cook cabbage, jicama, and carrot to 2 to 3 minutes (until just crisp-tender)
    3. Put cabbage mixture in bowl and add orange, mint, and lime juice.
    4. Add salt to taste and toss
