!Larb Lettuce Cups
| Qty | Unit | Ingredient |
| 10 | oz | Ground turkey |
| 1 | ea | Green leaf lettuce head (430 g whole) |
| 2 | oz | Grated or julienned carrot (60 g) |
| 1 | med | Red onion (185 g whole) |
| 1 | med | Tomato (130 g) |
| 1 | med | Jalepeno |
| 2 | tbsp | Fresh mint |
| 1 | tsp | Chili flakes |
| 1 | ea | Lime |
| 1 | tbsp | Fish sauce |
| 2 | tbsp | Ranch dressing |
Prep
Tear the lettuce into bite size pieces and wash.
Grate or julienne carrot
Chop onion into quarter inch pieces
Core tomato and chop into bite sized pieces
Thinly slice jalapeno
Chiffonade mint
Juice lime
Cook
Break turkey into chunks and cook in a hot, lightly oiled pan. Season with salt and pepper. Brown well on one side (3 to 4 minutes) then toss until no pink remains, about 1 more minute. Remove from pan.
Add carrot to same pan and cook until starting to soften (1 to 2 minutes)
Add onion and cook until softened (1 to 2 minutes)
Remove carrots and onions from pan and combine with turkey.
Combine tomato, jalapeno, mint, and chili flakes in a bowl.
Combine lime juice, fish sauce, and ranch dressing.
Toss lettuce in dressing, top with turkey mixture and tomato mixture.
