xxLemon White Bean Salad

Qty	Unit	Ingredient
¾	cup	White beans
½	cup	Castelvetrano olives (or sub green olives)
1	cup	Grape tomatoes
½	cup	Artichoke hearts
3	tbsp	Parsley
2	tbsp	Lemon juice (½ a lemon)
2	tbsp	Extra virgin olive oil

Prep
1. Cut olives and tomatoes in half.
2. Dice the artichoke hearts
3. Mince the parsley
4. Juice the lemon
Cook
1. Combine ingredients in a large bowl.
2. Salt to taste
3. Let stand
