Pork Chops with Apple Pan Sauce

2 ea Pork chops (5 oz each)
1 ea Apple
1 med Onion (185 g whole)
1 cup Vegetable broth
1 cup Shredded cabbage (65 g)
1 ea Sweet potato (185 g whole)
  1. Prep
    1. Dry and season pork chops
    2. Dice apple into quarter inch pieces
    3. Finely chop 1 cup of onion
    4. Shred cabbage and then dice into small pieces
    5. Rough chop potato into medium pieces
  2. Cook
    1. Put potato in a pot and cover with 2 inches of salted water. Bring to a boil and simmer for 10 to 12 minutes.
    2. Add cabbage and cook for another 1 to 2 minutes
    3. Drain potato mixture and reserve liquid.
    4. Mash potato mixture in the pot along with a tablespoon of the cooking liquid. Continue adding cooking liquid as necessary.
    5. In a hot oiled pan, cook the pork, turning frequently, for 3 to 4 minutes then set aside.
    6. In same pan, add onions. Season with salt and pepper and cook for 2 to 3 minutes. Add apple and cook until they start to soften.
    7. Add the vegetable broth and the pork to the pan. Cook for 3 to 4 minutes for the pork to be done. If necessary remove the pork again and cook the sauce until the apple is fully soft.
