Potato Latkes with Apple Walnut Salad

Qty Unit Ingredient
12 oz Potatoes (325 g)
2 large Carrots (335 g)
3 ea Scallions (50 g)
1 ea Egg
½ cup Flour (45 g)
1 ea Apple
¼ cup Walnuts (30 g)
1 tbsp Prepared horseradish
½ cup Greek yogurt
¼ tsp Cinnamon

Note: These don't reheat well. Either cook each serving individually, or serve both at once.

  1. Prep
    1. Preheat oven to 250° F
    2. Grate potatoes
    3. Grate Carrots
    4. Separate scallion whites and greens. Cut greens into thin round, and mince whites.
    5. Whisk egg
    6. Cut apple into bite sized chunks
    7. Rough chop walnuts
  2. Cook
    1. Combine the apple, walnuts, horseradish, yogurt, and cinnamon in a bowl. Salt to taste
    2. Combine potato, carrot, scallion whites, egg, and flour in a large bowl. Season with salt and pepper to taste.
    3. Working in batches, scoop out half cup portions into a hot well oiled pan. Press down into patty shapes. Cook for 4 to 6 minutes on a side. Put in oven on a covered plate while preparing remaining latkes.
