Potato Leek Salad

| 2 | cup | Potato (225 g; 6 to 8 baby potatoes) |
| 1 | cup | Green beans (131 g) |
| 1 | med | Leek (165 g) |
| ¼ | cup | Creamy Mustard Vinaigrette |
Prep
Dice Potatoes medium (3/4 inch)
Wash and cut green beans into 1½ inch pieces
Cut leek in half, and then into ¼ inch half moons. Wash thoroughly.
Cook
Bring enough salted water to cover the potatoes and leeks to a boil.
Reduce to a simmer and add the potatoes and leeks.
Cook until tender (5 to 7 minutes) and add green beans for last 2 minutes of cooking.
Drain and put in a mixing bowl.
Fold in the Creamy Mustard Vinaigrette.
