Potato Scallion Salad

Qty Unit Ingredient
4 ea Red potatoes (265 g)
3 ea Scallions (55 g)
¼ cup Creamy Mustard Vinaigrette
  1. Prep
    1. Cut potatoes into half inch pieces
    2. Cut scallions into thin pieces
  2. Cook
    1. Add potatoes to a small pot and cover with 2 inches of heavily salted water
    2. Bring to a boil, then reduce to a simmer for 5 to 7 minutes
    3. Drain and put in a bowl
    4. Add about one half cup of scallions, and vinaigrette to taste
    5. Season with salt and pepper to taste
