Prosciotto Plum Spinach Salad with Pita

2 Servings
Qty Unit Ingredient
3 oz Prosciutto
Sub: Bacon
2 ea Whole wheat pita
½ cup Grape tomatoes (50 g)
1 oz Goat Cheese
Sub: Feta
1 ea Plum (or other stone fruit)
3 cups Spinach (150 g)
4 tbsp Vinaigrette
  1. Prep
    1. Rough chop prosciutto
    2. Cut tomatoes in half
    3. Cut plum in to quarters (remove stone)
    4. Cut spinach into bite sized pieces
  2. Cook
    1. Cook plum quarters in a hot oiled pan, 1 to 2 minutes on aside to cool
    2. Cook prosciutto in the same pan for 5 to 6 minutes (until crisp and brown)
    3. Slice plum into bite sized pieces
    4. Cook pita in the same pan, 1 to 2 minutes, until warmed through and starting to crisp
    5. Cut pita into bite sized pieces
    6. Toss spinach and pita pieces in vinaigrette
    7. Top with tomatoes, cheese and plum.
    8. Top with prosciutto
