Prosciotto Plum Spinach Salad with Pita

| 2 | ea | Whole wheat pita |
| ½ | cup | Grape tomatoes (50 g) |
| 1 | oz | Goat Cheese |
| Sub: Feta |
| 1 | ea | Plum (or other stone fruit) |
| 3 | cups | Spinach (150 g) |
| 4 | tbsp | Vinaigrette |
Prep
Rough chop prosciutto
Cut tomatoes in half
Cut plum in to quarters (remove stone)
Cut spinach into bite sized pieces
Cook
Cook plum quarters in a hot oiled pan, 1 to 2 minutes on aside to cool
Cook prosciutto in the same pan for 5 to 6 minutes (until crisp and brown)
Slice plum into bite sized pieces
Cook pita in the same pan, 1 to 2 minutes, until warmed through and starting to crisp
Cut pita into bite sized pieces
Toss spinach and pita pieces in vinaigrette
Top with tomatoes, cheese and plum.
Top with prosciutto
