Roasted Asparagus with Yogurt Feta Sauce

Qty Unit Ingredient
1 bunch Asparagus (320 g)
1 bunch Green onions (65 g)
8 oz Cherry tomatoes
½ cup Yogurt Feta Sauce

Serve with roasted chicken.

  1. Prep
    1. Preheat oven to 425° F
    2. Snap off the ends of the asparagus and cut into 2 inch pieces
    3. Trim off the ends of the green onions and cut into 2 inch pieces
  2. Cook
    1. Place vegetables in a single layer on a greased baking pan
    2. Bake for 15 to 20 minutes, stirring every 5 to 10 minutes until caramelized
    3. If cooking with chicken and it finishes first, move the vegetables over the drippings to finish
