Roasted Peppers

2 Cups
Qty Unit Ingredient
4 ea Peppers (enough to cover roasting pan(s) when cut in half)
  1. Prep
    1. Preheat oven to 475° F
    2. Cut peppers in half and seed them, leaving top intact.
  2. Cook
    1. Roast in 475° F oven for 40 minutes
    2. Remove to a covered pot for 30 minutes so the skins steam and loosen
    3. Remove skins, leave little charred bits
    4. Cut into strips for storage; add any liquid that may have come out
