xxRoasted Peppers

| 4 | ea | Peppers (enough to cover roasting pan(s) when cut in half) |
Prep
Preheat oven to 475° F
Cut peppers in half and seed them, leaving top intact.
Cook
Roast in 475° F oven for 40 minutes
Remove to a covered pot for 30 minutes so the skins steam and loosen
Remove skins, leave little charred bits
Cut into strips for storage; add any liquid that may have come out
