Sambal Chicken with Mango Romaine Salad

2 ea Chicken thighs (5 oz each)
2 tbsp Mayonnaise
2 tbsp Garlic chili sauce
1 ea Head of Romaine
4 ea Carrots (100 g julienned)
1 large Mango (380 g whole)
1 ea Jalapeno (42 g whole)
2 tbsp Thai basil
2 tbsp Apple cider vinegar
1 tbsp Fish sauce
1 tsp Honey
½ tsp Grated ginger
2 tbsp Almond butter
  1. Prep
    1. Pound chicken thighs flat.
    2. Combine mayonnaise with chili sauce.
    3. Coat chicken with chili mayo.
    4. Tear romaine into bite sized pieces and wash.
    5. Julienne carrots.
    6. Remove seed and skin from mango and dice
    7. Slice jalapeno into thin rounds
    8. Remove stems from basil and roughly chop
    9. Combine vinegar, fish sauce, honey, ginger, almond butter, and 1 to 2 tbsp of olive oil into dressing.
  2. Cook
    1. In a hot oiled pan, cook the chicken 3 minutes on a side. Set aside to rest.
    2. Toss romaine and carrots in dressing.
    3. Top with chicken, surrounded by mango, jalapeno and basil
