Sausage and Vegetable Skillet

2 Servings
Qty Unit Ingredient
2 ea Italian Sausage
2 cup Shredded Cabbage (100 g)
1 cup Grape Tomatoes (200 g)
1 med Yellow crookneck squash (230 g)
1 med Red Onion (190 g whole)
4 ea Green onions
1 ea Garlic clove (to taste)
cup Green Harrisa Paste
  1. Prep
    1. Dry the sausage
    2. Shred the cabbage
    3. Cut grape tomatoes in half
    4. Cut the squash into bite size pieces
    5. Cut the onion into large pieces
    6. Cut the green onions into rings
    7. Mince the garlic
  2. Cook
    1. Cook the sausage for about 8 minutes, turning once and set aside to rest
    2. Char the tomatoes for about 2 minutes, until soft, then set aside
    3. Slice the sausage into rounds
    4. Char the onions and cook until soft
    5. Add back the tomatoes
    6. Add the cabbage, squash, and minced garlic and cook for a couple of minutes
    7. Add the sausage and cover pot. Steam for a couple minutes until the sausage is cooked.
  3. Service
    1. Sprinkle green onions and harissa on top.
