Shrimp Spinach Cioppino

| 10 | oz | Shrimp (spoon sized) |
| 1 | ea | Onion (about 1 cup chopped) |
| 1 | ea | Medium bay leaf |
| 1 | tbsp | Seasoning (celery seeds, sweet paprika, black pepper, ground mustard) |
| 1 | tbsp | Tomato paste |
| 2 | ea | Anchovy fillets |
| ½ | cup | White wine |
| Substitute ½ cup water with aromatic seasonings (fish sauce, vinegar, worchestershire sauce, honey) |
| 1 | cup | Vegetable broth |
| 1½ | cups | Roasted tomatoes |
| Substitute 1½ cups canned diced tomatoes and a dash of liquid smoke |
| 1 | ea | Tapatio to taste |
Prep
Dice the onion into half inch pieces
Mince the anchovy
Cook
Cook onion and bay leaf until onion is soft (2 to 3 minutes)
Add seasoning, tomato paste, and anchovy.
Cook until caramelized (about 1 minute)
Add tomatoes, vegetable broth, wine, and ¾ cup water
Bring to a boil then simmer for 4 to 6 minutes
Add shrimp and spinach and cook for 2 to 3 minutes
