Smoky Tacos with Black Beans

2 Servings
Qty Unit Ingredient
10 oz Pork Butt
1 tbsp Spice Blend (chili powder, smoked paprika, cumin)
½ ea Onion
½ cup Black Beans
1 cup Red Taco Sauce
¼ cup Cilantro leaves
1 small Apple
1 ea Lime
8 ea Street taco sized corn tortillas
  1. Prep
    1. Dice Pork into small pieces
      1. Add spice blend and half the taco sauce and toss to coat
      2. Set aside to marinate for a bit
    2. Rough chop Cilantro
    3. Dice onion.
      1. Set aside 3/4 cup for filling, mix remainder with cilantro for garnish
    4. Julienne apple and squeeze half the lime over them (toss to coat)
  2. Filling
    1. Cook pork pieces for 4 to 6 minutes until done.
    2. Remove from pan.
    3. Add ¾ cup of onions and cook until soft
    4. Add beans and cook until soft
    5. Add back the meat and stir to combine
  3. Serve
    1. Heat tortillas and serve warm with remaining ingredients.
