Smoky Tacos with Black Beans
| Qty | Unit | Ingredient |
| 10 | oz | Pork Butt |
| 1 | tbsp | Spice Blend (chili powder, smoked paprika, cumin) |
| 1/2 | ea | Onion |
| 1/2 | cup | Black Beans |
| 1 | cup | Red Taco Sauce |
| 1/4 | cup | Cilantro leaves |
| 1 | small | Apple |
| 1 | ea | Lime |
| 8 | ea | Street taco sized corn tortillas |
Prep
Dice Pork into small pieces
Add spice blend and half the taco sauce and toss to coat
Set aside to marinate for a bit
Rough chop Cilantro
Dice onion.
Set aside 3/4 cup for filling, mix remainder with cilantro for garnish
Julienne apple and squeeze half the lime over them (toss to coat)
Filling
Cook pork pieces for 4 to 6 minutes until done.
Remove from pan.
Add 3/4 cup of onions and cook until soft
Add beans and cook until soft
Add back the meat and stir to combine
Serve
Heat tortillas and serve warm with remaining ingredients.
