Spicy Zucchini with Wilted Kale

Qty Unit Ingredient
3 ea Garlic cloves
1 ea Zucchini (160 g)
4 cups Kale (135 g)
1 tbsp Capers
1 tsp Pepper flakes
  1. Prep
    1. Rough chop garlic
    2. Cut zucchini into quarter inch thick rounds
    3. Remove kale stems and chop into small pieces. Chiffonade leaves.
  2. Cook
    1. Cook garlic for about 30 seconds in a well oiled pan.
    2. Add zucchini and cook for 2 to 3 minutes
    3. Add Kale, capers, and a little water and cook, covered for 2 to 3 minutes (stirring occasionally) until kale is wilted.
    4. Remove lid and cook until water is mostly removed and kale is soft
    5. Toss with red pepper flakes
