Taco Bowls

| 4 | ea | Roma Tomatoes (230 g) |
| 2 | tbsp | Lime Juice (1 lime) |
| 1 | small | Red Onion (100 g) |
| 1 | large | Jalepeno |
| ¼ | cup | Cilantro |
| 10 | oz | Ground Chicken |
| - | - | Cumin, Chili Powder, Oregano to taste |
| 1 | cup | Cooked Rice |
| 1 | small | Avocado, or 1/2 cup guacamole |
| 1 | cup | Cooked black beans |
Prep
Seed and dice tomatoes into small pieces
Juice lime
Rough Cut onion. Mince ¼ cup and reserve the rest.
Cut into small pieces
Pull leaves off cilantro and chop into small pieces
Cut avocado into chunks, or prepare guacamole.
Pico
Add Tomatoes
Add lime juice
Add minced onion
Add cilantro
Salt & Pepper to taste.
Filling
Fry ground meat, breaking up.
Add reserved onion and jalepeno and cook until tender
Add beans and rice and cook until warmed through.
Serve filling with pico and avocado on top.
