!Tomato Spinach Lentils

2 Servings
Qty Unit Ingredient
160 g Red lentils
¼ ea Onion
1 small Carrot
1 small Celery rib
1 tbsp Tomato paste
1 cup Fire roasted tomatoes
3 cups Spinach (110 g)
  1. Prep
    1. Dice onion, carrot, and celery to quarter inch pieces
    2. Cut spinach to bite sized pieces
  2. Cook
    1. Cook mirepoix in a hot oiled pan until soft
    2. Add tomato paste and cook for a minute
    3. Add 1 cup water, tomatoes, and lentils. Bring to a boil then reduce to a simmer.
    4. Cook, covered, for 15 minutes, stirring occasionally and adding water as needed.
    5. Add spinach and cook, covered for a couple of minutes to wilt.
    6. Mix in spinach and continue cooking until soft.
