!Tomato Spinach Lentils
| Qty | Unit | Ingredient |
| 160 | g | Red lentils |
| ¼ | ea | Onion |
| 1 | small | Carrot |
| 1 | small | Celery rib |
| 1 | tbsp | Tomato paste |
| 1 | cup | Fire roasted tomatoes |
| 3 | cups | Spinach (110 g) |
Prep
Dice onion, carrot, and celery to quarter inch pieces
Cut spinach to bite sized pieces
Cook
Cook mirepoix in a hot oiled pan until soft
Add tomato paste and cook for a minute
Add 1 cup water, tomatoes, and lentils. Bring to a boil then reduce to a simmer.
Cook, covered, for 15 minutes, stirring occasionally and adding water as needed.
Add spinach and cook, covered for a couple of minutes to wilt.
Mix in spinach and continue cooking until soft.
