Turnip Kale Salad

Qty Unit Ingredient
4 cups Shredded kale (145 g)
1 ea Orange
1 large Turnip (250 g)
½ cup Pepitas
¼ cup Basalmic vinegar
2 tbsp Olive oil
  1. Prep
    1. Preheat oven to 400° F
    2. Shred Kale
    3. Peel orange, separate into segments and cut into bite sized pieces
    4. Cut turnip into bite sized, quarter inch thick slices
  2. Cook
    1. Bake turnips 10 to 12 minutes until soft and browned
    2. Make dressing with vinegar, oil, salt, pepper and a little orange juice (crush some of the segments)
    3. Combine kale, turnips, orange, and pepitas and toss in dressing
