Warm Carrot Salad

| 3 | med | Carrots (250 g) |
| 1 | cup | Grape tomatoes (125 g) |
| 2 | tbsp | Cilantro |
| ½ | ea | Lemon |
Prep
Slice carrots into bite size rounds about a quarter inch thick.
Cut tomatoes in half
Rough chop the cilantro
Cut lemon in half
Cook
In a pan with 1 to 2 tablespoons of oil, cook the carrots for 3 to 4 minutes (crisp-tender), remove to a mixing bowl
Add the tomatoes and cilantro
Add 1 to 2 tablespoons of oil
Add salt and pepper to taste
Juice the half lemon over the salad
Mix to combine.
